Short-time pasteurisation plant for highly viscous Liquid Malt Extract - LME
 
In line with the motto “Others build modules but we build everything”, we accepted an order for a flash pasteurisation plant for liquid malt extract in 2018. This syrup has a solid content of 80%. The viscosity at 40°C is approx. 11000 mPas, at 55°C it is approx. 2500 mPas. The investigation undertaken in advance showed that the syrup would reassume its starting viscosity immediately on cooling. The task was thus considerably more challenging than it would have been for the pasteurisation of honey. Pasteurisation means that a product is subjected to heat treatment for a defined period, e.g. 72°C for 30 seconds. Quick cooling must occur immediately after this so that pasteurisation is finished and no damage to the product occurs. We were able to make use of our know-how in handling highly viscous products during this project. We drew upon this knowledge for our system for dry intake of the viscous product, the design of the heat exchangers and the product degassing system in particular. CIP cleaning, sterilisation before the product run and the product discharge were just some of the other details we had to deal with. The plant’s capacity for expansion was an additional challenge. Function had to be possible with very low production rates at the start, which were to be increased by a factor of 10 at a later stage. Our system only has to have a few additional components added to achieve this higher output. The control allows straightforward recording of process data and archiving plus remote maintenance by ourselves.
